De oprichters huurden een consultant: Terry Heckler. Volgens CEO Howard Schultz, verdiepte deze zich in oude marine boeken en kwam met een logo op basis van een oude 16e-eeuwse Noorse houtsnede met een Zeemeermin. De Zeemeermin was exotisch en topless. Ondanks klachten ging Starbucks "met haar in zee". Schultz verklaarde later, "Bare breasted en Rubenesque"... De Zeemeermin moest nét zo verleidelijk zijn als de koffie zelf. Nu gaan we dat weer doen, om onszelf relevant te houden wanneer we evolueren zonder ons erfgoed te verliezen. De Zeemeermin is er altijd geweest. Ze is in het hart van Starbucks."
